Chicken Stuffed Spaghetti Squash
  • 1large spaghetti squash
  • 1large chicken breast
  • 1small can green diced chiles
  • 1can corn
  • 1can rotel
  • 4ounces sour cream
  1. Cut squash in half and clean out seeds.
  2. Drizzle with olive oil, bake at 400 deg. for 30-40 min.
  3. Drizzle chicken breast then bake til done and cut into small pieces.
  4. When squash is done, scrape about half the inside out and in a bowl mix well the insides with the ingredients above.
  5. Add salt and pepper to your liking.
  6. Place the mixture back inside the squash,
  7. Top with shredded cheese (I use cheddar or Monterey)
  8. Put them back in the oven for 15-20 minutes, then enjoy!
