Ingredients
- 1 large spaghetti squash
- 1 large chicken breast
- 1 small can green diced chiles
- 1 can corn
- 1 can rotel
- 4 ounces sour cream

Instructions
- Cut squash in half and clean out seeds.
- Drizzle with olive oil, bake at 400 deg. for 30-40 min.
- Drizzle chicken breast then bake til done and cut into small pieces.
- When squash is done, scrape about half the inside out and in a bowl mix well the insides with the ingredients above.
- Add salt and pepper to your liking.
- Place the mixture back inside the squash,
- Top with shredded cheese (I use cheddar or Monterey)
- Put them back in the oven for 15-20 minutes, then enjoy!
